Chef - the croquant layer on the top is a beautiful addition... To me it appears to very much evoke the sensation of old-school sensibility and that love affair that most guests have with breaking through the crust of a brulee, translated to a practical savory application.
Am i correct that that is the tangerine lace?
Who makes these bowls? They're great!!
